Meal Prep: 4 Ingredient Confetti Energy Balls

Every so often I stumble across a little food gem by throwing together a bunch of random ingredients in my pantry – and these healthy Confetti Energy Balls came to be exactly the same way!

I have a huge sweet tooth and typically I will meal prep something sweet to keep in the fridge or freezer to prevent me from purchasing a block of dark chocolate every week…

These energy balls are naturally sweet and packed full of nutrients to not only satisfy your sweet tooth – but help you to power through your to-do list.

You will need:

1/2 cup shredded coconut
1/3 cup dried cranberries (opt for the ‘no’ or ‘low’ sugar kind)
2 tbsp chia seeds
2 heaped tablespoons of nut butter (I used natural peanut butter, but cashew butter or almond butter would be delicious)
1 teaspoon of vanilla extract (optional)
pinch of pink Himalayan salt (optional)



Add your shredded coconut and cranberries to your blender or food processor (I use my Nutribullet) and pulse until they form a fine, sand like mixture. Add your chia seeds, nut butter, vanilla and salt until the mixture just pulls together in a dough. The dough should not be sticky and will only form balls when firmly pressed together.

Roll into balls and store in the fridge or freezer.
